Demand for honey has grown over the years due to its nutritional content and health benefits, unfortunately, along with the demand, there has been an increase in adulteration with sugars and syrups. Mass spectrometry testing for food authenticity with nontargeted methods are employed to find reliable marker compound(s) and targeted methods are used to test for known adulterants or residues, typically multiple reaction monitoring (MRM).
