But the workflow is challenging because food & consumer products are challenging, typically containing hundreds and even thousands of chemical characteristics that show-up as 'peaks' in the full scan accurate mass MS chromatogram. This challenge means it is essential to not only have a good mass spec system to collect the data, but a good data processing workflow to get answers from those complex data files.
